Elisa Rodriguez, RD, LDN

I’m thrilled to be your friendly dietitian promoting a groovylicious presence with proper nourishment, alternative therapies and holistic living for empowered peeps – such as yourself!

My credentials are “RD, LDN.” A Registered Dietitian (RD) is a food and nutrition expert who has met specific academic and professional requirements while maintaining continued learning. A Licensed Dietitian Nutritionist (LDN) is a state regulation for dietitian and nutrition practitioners to help keep us legit.

Back in the day I attended college with a D1 athletic scholarship, received my degree in Nutrition & Dietetics from the University of Delaware, completed a 9-month didactic internship at Geisinger Medical Center and worked as a clinical dietitian at two large hospitals. In the medical setting, I educated a wide population of autoimmune, cancer, diabetes, and heart disease patients. During that time, I battled my own autoimmune illness for nearly a decade.

Less than five years into my career, health issues forced me to stop working while I re-evaluated my priorities as both a patient and professional. I took a year off and in that time, I became a Nutritional Education Trainer from the Nutritional Education Institute while earning a Certificate in Plant-Based Nutrition from eCornell. Through my research and experience, I realized that what we choose to consume on a daily basis has a drastic impact on our existence.

Today, I find fulfillment in providing online nutrition solutions to clients all over the country. I’m the founder of EatUrVeggies.com, a contributing author for OneGreenPlanet and an active member of the Vegetarian Nutrition (VN) and the The Dietitians in Integrative and Functional Medicine (DIFM) Dietetic Practice Group(s) of the American Dietetic Association (ADA).

As a nutrition professional who lives with several autoimmune conditions and various food sensitivities – I offer a unique perspective to those navigating today’s challenges from a mere understanding of “food” to treating chronic disease in a broken health care system. I teach people to seek empowerment through lifestyle choices with a holistic emphasis that yields incredible outcomes!
